Grain bowls seem to be popping up everywhere in different eateries but you can easily make & customize them at home! Here’s how I make my favorite vegetable one.

I use jasmine rice as a base and cook it with a cup of coconut milk & lime or lemon.

Cilantro is also really great cooked in with the rice or put on top as a garnish.

A bit of lemon juice squeezed into the cooking rice makes it tangy and full of flavor.

I cut a few sweet potatoes into cubes and roast them in the oven with some olive oil & pepper. Edamame is also a really great vegetable to sprinkle on top of your bowl.

Avocado is my favorite ingredient in my bowl because of how creamy it is. It also proved to be quite photogenic!

I like to slice it and layer it on the top of the bowl as the last ingredient.

Colorful vegetables in the cooking process!

Spinach & corn also make great additions. You can experiment by switching up your ingredients and adding your favorite vegetables into the mix.

Recently I have been trying to include seasonal ingredients. I have been growing some lavender in my yard and know that it’s edible so I decided to use some.
