RED VELVET CREAM CHEESE BROWNIE RECIPE

FOR THE BATTER:

  • 8 Tablespoons (1 stick) of unsalted butter, melted

  • 1 cup of sugar

  • ¼ cup of unsweetened cocoa powder

  • ½ teaspoon of vanilla extract

  • 1 tablespoon of red food coloring

  • 1/8 teaspoon of salt

  • ½ teaspoon of white vinegar

  • 2 large eggs

  • ¾ cup of all-purpose flour

FOR THE CREAM CHEESE FILLING:

  • 1 (8-oz.) package of cream cheese, softened

  • 3 Tablespoons of sugar

  • ½ teaspoon of vanilla extract

  • 1 large egg yolk

Everyone knows that a box of chocolates is one of the most traditional Valentine’s Day candies, but do you ever get tired of the same old Whitman’s chocolate every single year? Want something different? Red velvet cream cheese brownies are the perfect solution! They’re delicious, fun to make, and perfect for yourself or the special someone in your life!

DIRECTIONS:

  1. Put on some music! (This step is optional, but baking is 100x more fun if you’ve got something to jam to).

  2. Preheat the oven to 350°F.

  3. Line an 8x8-inch baking pan with parchment paper and grease it with butter (or PAM cooking spray, which I find much easier).

  4. Melt the butter by heating it on the stove. Don’t let it burn!

  5. In a large bowl, stir to combine the melted butter with the sugar, cocoa powder, vanilla, food coloring and salt.

  6. Stir in the white vinegar.

  7. Whisk together the eggs in a small, separate bowl, and stir them into the brownie batter.

  8. Fold in the flour until just combined, and pour ¾ of the batter into the prepared pan.

(***IMPORTANT*** Leave ¼ of the batter in the bowl for the top of the brownies! Otherwise they won’t be as pretty!!)

CREAM CHEESE FILLING:

  1. Using a stand mixer or a handheld mixer (I personally recommend a stand mixer), combine the cream cheese, sugar, vanilla, and egg yolk until well combined.

  2. Spread the cream cheese mixture evenly over the batter.

  3. Top the cream cheese with the remaining brownie batter.

  4. Here’s the fun part! Using a sharp knife or a toothpick, swirl the cream cheese together with the dollops of brownie batter. This is where you get to make pretty patterns if you want. Go nuts!

  5. Put the pan in the oven, and bake for 30 minutes.

  6. When half an hour has gone by, check to see if they’re ready by sticking in a toothpick. If it comes out clean, they can come out of the oven. If not, let them bake for a few more minutes.

Once your brownies have cooled completely, cut them up, put them on a pretty plate, and voila! A delicious, easy, and fun Valentine’s treat that isn’t candy hearts or a box of chocolates from the dollar store. Once they’re ready, you can share them with friends, family, a special person, or you can just keep them all for yourself (treat yourself!). Enjoy!
